Shrimp Spaghetti with Asparagus and Feta

A healthy light meal for those warm Summer days.


, Cook pasta according to the package directions; drain and return to pot.

Meanwhile, heat 1 Tbsp of the olive oil in a large skillet over medium-high heat. Add the asparagus and cook, occasionally stirring, for 4 to 5 minutes, until crisp-tender. Remove asparagus from the pan. Add 1 Tbsp of the olive oil to the pan. Add shrimp. Season to taste with salt and pepper. Cook, frequently stirring, for 3 to 4 minutes, until shrimp are pink and opaque throughout. Stir in the lemon juice and lemon zest.

Add shrimp, asparagus, and feta to the pasta, along with the remaining 2 Tbsp of olive oil. Season to taste with salt and pepper. Toss to combine.

Divide pasta mixture among four shallow bowls. Serve immediately.
