    Frese Calabresi

    Refreshing Italian summer meal using seasonal ingredients. I Found this recipe on a recent trip to Italy. Use the freshest ingredients you can find. Ingredients: Put bread on a plate. Drizzle with olive oil. In another bowl, cut up the tomatoes. Add a sprinkle of salt. Add a sprinkle of oregano. Then put the tomato mixture on top of the bread. Optional: Add a drizzle of balsamic vinegar and/or blue cheese.

    Shrimp Spaghetti with Asparagus and Feta

    A healthy light meal for those warm Summer days. Instructions: , Cook pasta according to the package directions; drain and return to pot. Meanwhile, heat 1 Tbsp of the olive oil in a large skillet over medium-high heat. Add the asparagus and cook, occasionally stirring, for 4 to 5 minutes, until crisp-tender. Remove asparagus from the pan. Add 1 Tbsp of the olive oil to the pan. Add shrimp. Season to taste with salt and pepper.
